What does the role entail?

The Pete's Sunset Grille Restaurant Chef de Cuisine will assist with the oversight of the Restaurant Culinary operations. The primary role of the Chef de Cuisine is to ensure optimum guest and employee satisfaction. The Chef de Cuisine will take council from the Executive Chef to create, implement menu and concepts, but the position is designed so that individuals will work in a manner that is consistent as that of an independent owner/operator.
Responsibilities include:
• Act as senior leadership by developing and assuming key management responsibilities
• Assume the role of liaison between all dining room operations and culinary staff
• Supervise the preparation and cooking of various food items
• Develop and implement creative menu items within the restaurant concept
• Plan, coordinate & implement special events and holiday functions
• Manage hourly kitchen employees through scheduling, payroll, training, coaching, evaluating and hiring
• May manage other key culinary leadership rolls including supervisor and other less senior Sous Chefs
• Lead and coach the team towards achieving exceptional guest service and employee satisfaction results
• Monitor food production, ordering, cost, and quality and consistency on a daily basis
• Participate in marketing events directly related to their specific restaurant Responsible for short and long term planning and the management of the Spa operations in the front and back of the house
• Oversee development of employees
• Hire, train, empower, coach and counsel, performance and salary reviews
• Coach and counsel employees to reflect Hyatt service standards and procedures
• Assist in implementation of payroll, reports, forecasts, inventory and budget for the operations
• Resolve customer complaints as appropriate to maintain a high level of customer satisfaction and quality
• Implement procedures to increase guest and associate satisfaction
• Maintaining Hyatt standards of service and ensure their implementation
• Performing daily walk-throughs to ensure full compliance with Department of Health regulations and Hyatt Corporate standards

Qualifications
Your experience:
• In-depth skills and knowledge of all kitchen operations
• Possess strong leadership, communication, organization and relationship skills
• Experience with training, basic financial management and customer service
• A true desire to exceed guest expectations in a fast-paced customer service environment
• Capable of producing a consistent product in a timely manner
• Strong training and communication skills
• Culinary education and/or on the job training, independent restaurant experience is preferred
• Geographic and schedule flexibility required including evenings, weekends and holidays.
• Must possess the following strengths: high energy, entrepreneurial spirit, motivational leader, proven track record in high volume concept, effective communicator, effective in providing exceptional customer service and ability to improve the bottom line.
• Refined verbal and written communication skills, including competency with Excel, Outlook, Word, PowerPoint, and Publisher.
• A true desire to satisfy the needs of others in a fast-paced environment, including guests, associates, management team and owners.
• Must be able to work weekends, holidays, and be flexible to work AM/PM shifts according to business demands.
• Candidates should be extremely detail oriented and organized.
• Must have excellent organizational, interpersonal and administrative skills
• Duties may also include training, staff development and scheduling
• Must have physical stamina to lift moderate amounts of weight
• Ability to stand and walk for long periods
• California Food Handlers Certification required
• CA Responsible Beverage Service (RBS) Certification Required
